Doug, there is so much to do around here.. for walking.
From Post Cross keep on the A373 and go to Honiton take a right in the High Street and then left at the rab on to the A375 and the Sidmouth Road. Past Tesco's and up the hill to the excellent Hare and Hounds pub. Turn right there past the Caravan Club campsite. Take first left along the East Hill strips. There are two off road routes down on the right of this road that Clive might have on a map somewhere. At the end of the road is a carpark called white post. Park here. Look out at the views of Ottery St Mary, Woodbury Common. Walk along the now rupp classified track towards the see and Harpford Down, walk around the perimeter of the down and back to the dub. This is a really beautiful walk with views inland and out to sea.
From Post cross head north on the M5, take first exit A361 NDL towards Barnstaple, take first exit again to Sampford Peverell, park near the Globe public house, walk along the Tiverton canal to Halberton and back, refresh yourself with a pint and snack at the globe.
Visit the beautiful gothic house NT house Knightshayes at Tiverton, really beautifull woodland garden and walled kitchen garden. This is signed from the North Devon Link road A361 as above.
For a cycle route, I would head across the Post Cross cross roads towards Aller, follow signposts to Plymtree and Talaton. From Talaton past escot house to Ottery st mary, follow the river up to Tipton st John, refresh yourself at the golden dragon pub, either now divert to Sidmouth , or return via sidbury and Honiton. Or take a cycle over the fab Woodbury Common, and the B3180 to Whimple, then Talaton. You could even follow the river from Tipton st john towards budleigh salterton. It is all good, but the main roads will be busy.
If you like main road head down cycling then follow the old A38 into Exeter, the B3181. Undulating fast road, then cycle into the center along the cycle routes along the river. Very scenic way to enter exeter.
You can cycle the entire tiverton canal and back, 20 miles ish. Park on Canal Hill in Tiverton, or at the Globe in Sampford.
The tarka trail near barnstaple is good, but a bit of a drive, via syncrospare perhaps??

Yes, we were told at Kinnerton that the high walk at Knightshayes is about 2 hours and one of the best in the area. It isn't open one day a week, but forget which day (Jenny?)

Just seen your post, I know the area from Honiton to Tiverton and beyond, have cycled it a few times several years ago and can tell you its a very pleasant ride as is the road from Tiverton back to Exeter with some nice pubs en route, tested two very recently.
Now considering coming up earlier this weekend subject to work commitments as I am spending more time on my bike recently and might join you?
Just done 90 miles around Morlaix and the pink granite coast.

Rough itinerary:
Thurs - arrive if desired
Friday - arrive
Friday evening - Dine at campsite (we are currently trying to plan something special, if so details later)
Saturmon - Others arrive early
Saturday - Drive out on known routes/lanes/tracks - return circa 6-00pm
Satureve - (Optional) Walk to Kentisbeare Inn, beer/food etc, walk back, resume drinking and stargazing tradition
Sunday - Free morning. After-noon, drive out to Exmoor and some easy lanes and beauty spots. (pre-planned)
Suneve - More beer, feed yourselves, homegoers depart
Monday - Stayovers welcome (plenty of local places to go see)
Wont be over for this one...... not enough time spent drinking!!
