It's not playing. The light works, because it flicks on and off quickly when you first turn the ignition on, almost like a self-test of the bulb. But it's off before you switch the engine on - even from a cold start after a couple of days of non-use. I'm presuming it's just a normal oil pressure light, right?
So... time to check into the wiring & switch. Where's it hiding?

I have had the opposite problen of oil light coming on too much!! On a DG (and prob your 2.1) there are two sensors, one on the passenger side engine bank and one by the water pump.

That's RHD "passenger side", yes?
Looks like the bodgefairy's been busy with wiring... There's a two-wire (blue & yellow) multiplug wrapped in a mile of 'leccy tape coming out of the loom, beneath the ignition amp on the side of the engine bay. Emerging from that, a DIY earth and two brown wires, one heading somewhere around the flywheel end of, then under the cylinder bank, the other doing the same round the water pump area.
Except looking at it all made all the wires fall out... So - unwrap, and prod about. With ignition on but engine not running, earthing the blue causes the oil pressure light to start to flash. Bingo. The multiplug's a seized, corroded mess, so I can see a bit of random chopping-off in my near future. Which sensor should be which wire?
So - blue's low-revs, yellow high. A quick look at the PDF of the Bentley manual suggests the blue low-rev sensor's the one by the water pump, right?

Getting out there and reconnecting them, but the other way round, has resulted in an oil light that comes on with the ignition, and goes off once the engine's started - and stays off above 2,000rpm.
That's one thing off the list, then. Just as well, really. It was starting to get a bit long...

Not fixed. Or, rather, not quite as fixed as I thought.
The light's spending far too much time on - but only above 2k rpm or so. It's on-off-on randomly (no, I don't mean the flashing...), so I'm fairly happy it's just a wiring problem. High rev sensor shorts when there's pressure, right? So a fractured wire or poor connection going open would make it look as if there was no pressure.
I gather it should be buzzing, too? Nothing. Silent. (Fortunately)

Your low pressure sensor (blue) (oil light) is the one between No 3 & 4 cylinders under the protective ppushrod tube plate
The high pressure sender (grey) (buzzer) is at below the water pump and next to the oil pump
