Have got tweeter holes in my door cards but was wanting to fit a set on top of dash. Can I run both off the single tweeter/cross-over control box?
Or will it over-load box or sound rubbish?

You can run both, at least when you fit them properly. The point will be, that your high tones will be very loud.

In addition, I would add that you can add very simple resistors to the tweeters get the balance of high to low sounds right though. A simple 8 Ohm 10 Watt resistor will reduce their output, or you can try 22 Ohm 10 Watt etc until it sounds right. The resistors are very cheap from Maplins and just fit into one of the tweeter feed wires on each tweeter.
Also keep your left and right correctly wired to, err, well left and right
And also keep your red and blacks ( or + and - ) all the same to maintain what they call "phase alignment" ( that is making sure the tweeter diaphrams move in and out in synchrony (if you see what I mean
)
BTW - that last bit is even more important with the bigger speakers and getting it wrong will lose you loads of bass.

Not only will they be very loud, high tones give the sound directionality. The aim for car hifi is to have the singer/centre stage to accoustically appear to be mid dash or in front of the screen. If you start adding multiple tweeter sources each side, this will blur any imaging you have - you will end up with just VOLUME. Stick with one pair - they are usually plenty loud enough - it is mid and bass that is usually too weak or missing in depth. The best location would be top of dash up in the corners by the screen, or mid way up the A pillar at ear level.

Whilst I am "into" real Hi-Fi, I often wondered how close you can get to a proper "soundstage" in a car. I mean you can't sit in the sweet spot in a car anyway (unless it's a Mclaren F1)

I have not had the opportunity to hear a properly set up Hi-Fi in a car, only those "max power" type setups.
Note I have put Hi-Fi in bold italics to differentiate it from simply "clean and loud" systems
