I've taken off my brake calipers to send them off for a refurb and clamped the flexible hoses to prevent fluid loss. I then started thinking of fitting braided hoses while I'm at it , but found I can't put a plastic bag under the reservoir cap and screw it back down to stop the fluid escaping because there is a level-sender-flow thing sticking through the cap. Any tips on how to change the hoses without dropping the brake fluid? - other than just doing it as quickly as possible? ?

I have braided lines on.. had to drop the rear brake backing plate off.. what a pain not being able to clamp the hose.. had to crack the wheel cyl and dissmantle and reconnect quick..
Going to look at some cap adaptation to apply a small amount of vac to the resevoir next time.. but that could cause problems itself..
Worth dropping the fluid and refilling with nice clean and fresh if you are going to the trouble of caliper refurb.. Who's doing it and how much as they are not dear as exchange units from Brickwerks/GSF etc... and come replated and with new pistons too...

I'm sending 'em off to "BiggRed"http://www.biggred.co.uk/modern.html as seen in Practical Classics magazine, getting them done in red polymer with sliders to match - a bit dearer than Brikwerks but thinking they'll look cool behaind the alloys!

Rather than cap adaption and applying vaccum, which as you say can cause problems why not have some ends made up to spin on to the brake pipes, that way when removing a pipe fluid loss will be minimal. They can either be turned up from scratch or the relevant male/female union nuts modified.
I made them up as the the only easy way to lock off a braided flexi.
