Just one hose, although a connector will do no harm

It's just two extra connections to potentially leak. Worst being unable to suck water back but able to suck air instead.

Yup. I think that's what I now have.
Couldn't find the pipe on Brickwerks, is it one that you buy or do you just cut some general pipe down to size

Correct size is 7.5mm but that is hard to get and expensive. 8mm fits and works fine, search Brickwerks for 8mm hose and it pops up. Or just get it from your local motor factors

I read that if the level in the header tank (engine bay) gets too low then you may have to re-bleed. Does 'too low' mean beneath the top side pipe or the bottom side pipe (or totally empty)?

i would say as long as the lower connection is still below the coolant level you'll be fine
