As it says in the subject - I'm taking the dash out to replace the blower motor... what other jobs / preventative maintenance should I be looking to do whilst the dash is out???

By far the most important is too clean up the earth crowns on the left (uk passenger side) inner wing above the fuse box.
Other than that, give everything a good looking over, repairing rusty or loose connectors, replacing faulty dash bulbs and generally tidy up the wiring as you go along.
You could check around the window seal for water getting in and / or corrosion in the corners.
You could look at you hydraulics (brake master cylinder, servo and clutch master cylinder for condition and leaks.
Don't think that there is much else left..
Electrics,
Window seals,
Hydraulics...

Lost track of how many times this has been asked so pasting my previous reply:
The one good thing about removing dash (and to be honest it doesn't take that long) is you get an opportunity to replace/rewire/refit items that haven't really been seen since the vehicle was built, and that includes washer pipes which by now will be furred up like a smokers arteries.
You can also mount pod speakers under there which sound infinitely better than those little things people try to cram in the door cavities.

Since you're going to be pulling heater box out to get to the blower motor you could get some self adhesive neoprene roll and reseal the heater flaps. Will probably find the original foam seals crumbling away.

Stick some anti drone pads to the inside of the front panel.
