Re: rear wheel bearing renewal question
Personally I put them in a zip-loc bag with a load of grease and squeeze the grease into the bearing till no more will go in ... save with CV joints but I also put some into the boot as well

Re: rear wheel bearing renewal question
plenty grease and fill the void outside the spacer tube, if they run hot the extra grease will melt and provide more lubrication

Re: rear wheel bearing renewal question
Don't over grease them that's as bad as under greasing them.
Only 30% of the volume needs to be filled otherwise the churning grease heats up and can cause the cage to hydraulic causing the bearing to skid.
Plenty of information available start here.

So that's clear then lol.....I'm somewhere in between, fully pack the bearings but half fill the void to allow for expansion.
