Replacement Carburettors for 2.0ltr A/C

Just about to drop engine to go off for a recon, have got round to thinking about changing carb set up, solexes are probably life expired.
Any thoughts on the best options, a single weber or twin webers. I hear conflicting comments, Want a bit more oomph and a few more miles per gallon.

maybe just get the original ones rebuilt - try SteveS at Gasure
