I guess the only thing i'm not sure on is engine mounts, does anyone have any views?

You can get away without modifying them according to this post / thread in the archive:

Just one thought, could you maybe turn the various sections of the document you've started into posts in this thread ... the info is more likely to be of use to someone doing the same conversion in future if it's on here rather than buried in micro$ofts basement in the bottom of a locked filing cabinet stuck in a disused lavatory with a sign on the door saying 'Beware of the Leopard'

I have a jx exhaust manifold based in Nottingham if you after one. Had it machined as they warp at no 1.
