Ok, so depress the throttle twice to set the choke, then turn the key to the second click and she will turn over and start, however she won't idle or won't stay on the choke.

If I hold the key on the second click and press the throttle to the floor, I can rev but again, if I let the key go she will stop, the same when I take my foot off the throttle.

Check power to the idle cutoff solenoid and ensure it clicks when connected/disconecccted with the ignition on.

Do you mean the idle cut off valve?

Had been thinking it might have something to do with that as when I checked it, the electric connector is not a tight fit.

Can you buy a replacement valve? Been on JK and Heritage but can't seem to find one.

Replacements are thin on the ground new or used.  Some other applications of the 2e3 don't use it and have a blanking plug, this does mean you may get run on after the ignition is swtiched off "Dieseling"

Would it be an issue if I disconnected the electric connector and left it like that, as long as I make it safe?

As not got anyway of testing the solenoid, when turning the ignition on or off,.I can't hear any click, so beginning to think it's an electrical fault that's causing my issue.

Tried starting with the cable removed from the idle cut off and still nothing in terms of the engine running!

The solenoid is energised with the ignition on, so disconnecting it will stop fuel delivery.

Take it out and put 12v across the terminal and body. the cone should pull back into the solenoid body.

To test the wiring put a car lamp on the feed wire and other terminal on bulb to the engine earth.
