Looking for the coolant hose diameter that comes off of the pump housing as I'd like to put an in-line temp sensor as a sense check as the dash sometimes acts up...
There are two day hoses coming off to the left of the engine towards the back of the engine bay which I believe to be connected to the pump or the block...
Any help would.be great!

What year van ? The cooling systems are different late to early. Better still put a pic in the post using the imgur i box above so we can see to which hose you refer and advise appropriately

That's a late set up, not original to your 1984 van; pipe from pump to thermostat housing is metal; easiest way to get a temp sender is probably to fit a 2.1 thermostat housing on which has the temp senders fitment built in
