What is the correct start up procedure (cold and hot)
for the 2.1 DJ fuel injection vans.

If all set up correctly and sensors /ECU /injectors/earths/Hall sender etc working properly then:
No foot on accelerator pedal either hot or cold. Turn key and engine fires, and goes on a slight fast idle for a few seconds when cold. Then drive away. At least that how my DJ works.

As above, the only thing I would add is I turning on the ignition and listening for the fuel pump charging up the pressure before cranking. It's only a few seconds.

Should catch and settle to idle immediately.

Agreed. Although I just can't through habit ommit to depress the clutch pedal when starting from cold so as to give the system the best chance.
Incidentally I park on a slight up hill slope and, particularly on icy or compressed snow conditions I just gently let the clutch upon tickover to ull away while my often FWD neuighbours slide around getting nowhere. I often use the same technique in my Focus.

it's injection with idle control so just turn the key and you're away.
f it's set up badly then you'll need to give it some throttle for a bit.
