2.1 injection to carb conversion.

Can anyone advise on the parts required to convert my
 2.1 injection to carb and any tips required on this conversion.

Why? Most injection faults are an easy fix once diagnosed, and a properly working digijet is much better than a carb. If running LPG, it'll make little difference.

My vehicle (recently purchased) was running very rich and while doing
 some mixture adjustments (no previous experience with this injection system)
I disconnected the idle valve connection with the engine running foolishly 
the engine stopped and then refused to start.
My other van is running a 1.9 dg petrol/lpg setup which I am very happy with.

If you already have another van which is a dg running a carb you can see everything you need to make the 2.1 the same !

It’s all bolt in n stuff and interchangeable

Looking at my dg engine the list of parts required
would be carb and linkage, inlet manifold, air box etc,
throttle cable? distributer? I intend to use a electric fuel pump
plus the new fuel pipes filters etc, would the injection fuel tank
require replacement?

Disconnecting the idle valve with the engine running shouldn't damage anything. I've done that dozens of times recently while diagnosing my intermittently sticky idle valve.

If you do swap to carb, I would be interested in buying all your injection stuff to keep as spares.
