The only way to.be sure is to stick a K type thermocouple down the dipstick and drive it
I bet your gauge is as inaccurate as mine.
I regularly drive at 70 and thats when it really starts climbing at 60 to 65 it runs cooler.
I have the stock oil cooler also and this is just a 1.9 I have yet to.do the same test on the 2.1
