The wire I am holding doesn't connect to anything, but if you follow the wire connecting to the solenoid you can see where it leads to.

Spot on ta for that, after some research it appears it doesn't essentially need that wired up plus i don't have the same level of wiring you seem to have. The joys of someone else tinkering with everything before it bcomes your issue ha.
So ive managed to find an air leak coming through the air filter housing gasket on the top of the carb, so have manufactured up a new one and got the engine to run for longer. The engine will run for like 30 seconds and giving it some throttle will no longer stall it and actually revs it up but now it will just stall no matter what. So think i just need to faff around with the auto choke settings then maybe the mixture screw once it runs long enough to get to operating temperature

Sounds like your getting there with it - these vans literally require a process of elimination so as long as you are methodical you will sort it. You're right that you'll probably find some bodges here and there. I've literally changed all ancillaries in the engine bay so should anything go, I should have a rough idea what it might be.
Recently I went on a long run & van was faultless until I returned home and i started having 'advance' issues in that I had nothing mid throttle - not great on the motorway. I replaced the vacuum advance hose with a spare and it's run perfectly again so think it was collapsing under constant speed.
With regards to the extra wiring, I've got lots of extra earths in the engine bay as I was having sparking issues at one point which actually turned out to be the dizzy (probably the hall sender).
