Re: How much paint
I'd say you'd need 2.5 litres of Base coat, depending on the colour as lighter colours can grin through to the primer underneath
and 2, perhaps 3, of clear.
If using a light colour, you can tint your primer to avoid grinning.
I take it that you've used c.o.b before? Just mentioning the need for proper handling and use of 2 pack product, unless you are using non-iscocynate lacquer though that still needs caution in itself.

Re: How much paint
OK, but as this stuff is expensive, make sure that your compressor is up to the job, that you use the correct air cap and needle size in your spray gun, etc. When you mix your Base coat particularly, use some McDonald's type mixing cups from your supplier. These have the mixing ratios printed on the side and ensure you mix it according to the instructions and stir the Base coat well, or that can give colour issues too.
Your compressor needs to have a decent air delivery or you'll get a patchy effect, too much air will lighten a colour, too less darkens it, etc.
As youve not done this before, then I'd certainly buy an extra litre of Base coat and lacquer and practice on some sheet metal or an old door etc before I'd attempt doing the entire van from scratch. Yes, more cost but so is having to do the whole job again

It depends on your gun to some degree. If it's an hvlp one then it would be lower than an older style gun. For solid colours and clearcoats with my hvlp I use around 40 psi. Again, much depends on your aircap set up. I do suggest that you do some trial pieces first with air pressure set ups and see how you get on. Use an in-line air moisture trap too so as to avoid spoiling your fresh paint
