Haven't driven the van all winter so after a battery change I took her for a quick spin (1984 1.9 petrol club joker) and noticed the water temp warning light is flashing constantly.
Gauge says temp is fine and gauge does move but never gets too hot.
Any idea what it could be?

Check the coolant level in the expansion tank. The flashing light is telling you the coolant is low or there is a sensor issue.

Just in case you didn't know, the expansion tank is the one over on the left side of the engine, not the one behind the number plate.
Expansion tank = full to the brim. Top up tank = 1/2 full (when the engine is cold).
Tip, don't use the stub pipe on the cap to help unscrew it, they break off rather easily
