Did you test the new thermostat before you fitted it.?
Did you fit it the right way round with the blanking disc at the bottom?
I've had a couple of new that failed to open.

you could try a cooler 'stat from Brickwerks (80 deg C)

I run the cooler stat and it works well it keeps my gauge at around the Led in the middle, the lazer thermometer reads around 83-87 degrees at normal running. With the old stat it ran between 89 and 95. Now what I need is a thermoswitch that will put the fan on earlier as it doesnt seem to come on until 95 at present and speed 2 comes on way over 100 which is difficult to test!!! I have never really had a problem bleeding the system on the level, plenty of revs and keep adding coolant at the expansion until its full and no more air comes out of the rad bleed. If you have the bleed valve ontop of the stat housing leave it open for a while so air can escape up the thin hose to the bleed ring. After you have left it over night bleed the rad one more time as some smaller air bubbles will have found their way to the top.

does your rad get hot when temp gauge at 3/4 ,,,,,if so your stat must be working/should get plenty of heat from pipes as well
i had similar prob......new stat/ bleed etc etc........found gauge reading was electrical prob....
