Putting the gauge next to the pump tells you the pump is ok..but that's all
It won't tell you, for instance, if the oil filter is restricting flow.
Gallery pressure is the last point of pressure on the circuit, from there it runs into the rockers
You're looking for 40 psi at 3500rpm with a hot engine

With the gauge in the hole below the waterpump at tickover, hot, I have 25 PSI and at 2500 rpm I have 60 PSI (both of these are with a hot hard working engine). At a reasonable 40 miles an hour I have 50 PSI. Flat out I get 65PSI when hot. (the engine has recently been rebuilt so tolerances are good)
I have just taken her out on a run to try to recreate the noise and around the flatter non mountainous roads of Redditch even with all the traffic islands I cannot get a repeat of the noise. I'm going to Aberystwyth again next weekend so I'll try to make notes of when and what Ive been doing immediately prior to the noise and I'll also make a point of looking at the oil pressure gauge in all the tight corners and uphill bits!!!
These vans certainly like personal attention all the time, they seem to love being in the workshop too much!!!
