Before I take george the flying kettle away for a little jaunt, quick bit of advice required.
Have now got a working temp gauge so have run him up to temp on the drive. It sits at just over half way up the dial when stationary on the drive. Given him some revs at 2k until the needle reache just over 2/3 when the fan kicks in and the temp drops back to its previous position.
However, when I turn off the engine there are bubbling and gurgling sounds from the engine bay - the header tank and some pipes for a few minutes after the engine has been turned off.
First question - do the readings from the temp gauge sound about right - never had it working or a watercooled so I have no idea.
Second question - should the coolant bubble and gurgle (I am bleeding bits of air out - van has been at 35deg to horizontal for this and will keep doing it)
Third question - if the temp gauge readings are a bit high but ok, can I fit a fan thermostat that kicks in at a lower temp?
Once again any advice appreciated.

half way accross gauge is "normal".. as long as the fan kicks in at 2/3-3/4 and cools it down thats fine too..
bubbling is air trapped in the system.. if you have got it up to temp then opened the bleed screws on rad etc.. and got as much air out as poss.. You ideally need a few revs on when bleeding too...
take it up the road and bleed it again.. it will keep "finding" air for a while, as the system is not one of VW's best designs....
Oh.. you have to open the heater too... as a lot of air can be trapped in there!!

'toomanytoys' has answered everything except the fan thermostat. Haynes says some models have a two speed fan, (mine is one of them,) and the wiring diagram shows two thermoswitches 95C and 102C.
The wiring is a bit more complicated for the two speed, with an extra relay it seems.
You could always fit a manual switch in the cab, to overide the thermoswitch, but it would have to be via a relay as the fuse shown is 30 amp and the wire 2.5mm.

We live on a small lane and hardly anyone ever passes, but since I have been running him and he has been pointing skywards we have had hoardes wandering past.
One clever sod asked "when are you launching Thunderbird 2 then?"
Its surprising how wet 2 kids and 2 supersoakers can make an adult in less than 30 seconds - bloody hikers!!!
