This comes back to the heat riser elbow issue but....

Do I need them if I'm not bothered about heating the van?

What's the minimum exuaust bits needed to run? (Safely)

if you are not bothered then the simplest exhaust will do
j tubes and silencer

I think the OP is talking about running a standard exhaust with the risers & pods disconnected? You can take off all the pipework between the front of the van and the heat exchangers if you want. There's no need to blank anything off. My van has had my pods (rusted to dust) and junction box off since about March.
2ltr Aircooled CU with twin Solex's & originally a 009 dizzie, but now back to standard.
