Temp gauges normally come with a sender unit to screw into system you are measuring the temp of. The sender's resitance changes with temperature and the gauge has to be matched to it to work properly across the measured range.
2ltr Aircooled CU with twin Solex's & originally a 009 dizzie, but now back to standard.

the gauges are out of a MK3 golf, i was told they would fit ok, they just came with wiring and a relay

I don't think it's as simple as just plug and play , original engine will have an oil pressure sender so straight away that's the oil temp out. As for the water temp , as Boxy says you will need a sender matched to the gauge then either hope it fits in the original sender hole. Let us know what happens . Daz
