Hi there,
'NORMAL' for the coolant is approximately 90C
Oil is higher 115 - 120C? (wait for other comments) but this will vary greatly depending on load and amount of time under load etc so you might see 85C all the way upto 120C. Oil coolers also a make considerable difference.

Only my opinion/experience but I wouldn't be happy with Oil at 110+ for any length of time..

Years ago I had oil denature in a diesel T3 when running at 110+ it went like water and kept setting off the low oil pressure buzzer..

I would say oil at 100 max
1981 Vanagon Westy Burning oil as fuel...
