Hi, You are right about there being three senders.
There are two inside a single unit in the coolant output flange that connects to the block at the top.

There are four connections to that sensor pair (I had a 1996 Golf Donor)
Pin 1 = Brown = Earth for sensor on pin 3.
Pin 2 = Brown = Earth for sensor on pin 4.
Pin 3 = Blue/White temp sender that goes to the Automatic Glow Period Control Unit) (Pin 5 of the round T17 connector)
Pin 4 = Yellow/Red = THIS IS THE ONE YOU ARE AFTER (temp sender that drives the instrument cluster gauge) (Pin 7 of the round T17 connector)

I believe 3rd sender is just actually a temperature switch and it drives the Radiator fan circuitry. That sensor uses a 2 pin connector and it sits in a housing in the rubber pipe that goes directly to the front of the radiator in your donor vehicle.

I am using the AAZ sender to drive my T25 gauge and it works ok. It should read a little low as this AAZ sensor is a higher resistance then the CS engine's sender and the T25 gauge using current to heat a resistance that moves a bi-metallic movement.
