I have Sean a thread on here with someone using 3 mm ply then bending it to fit the curved profile of the roof. Used timber batons to screw it to.
I re covered the inside of my pop top with stretchy carpet from megavanmats using spray adhesive

as above used stretched lining carpet and spray adhesive from mega van mats , i had old head lining that i was replacing in cab area so got a look at how they created the pleat above the driver/passenger seat basically it s a pinched fold in the material with a metal rod running through it that sits in slots in the metal frame above the doors ,its under tension from being slightly longer than the gap and you sort of ping it into place when fitting, the rest of the van was fairly straight forward ,
watch out for fumes from glue tends to build up when got doors closed :ok
