We drove up to North Devon on Friday night. No problems most the way up, then about 3 miles from the campsite it started stalling again whenever it wasn't being revved. Next morning, started first time and idled fine and then worked perfectly all day as we tackled the (hilly) drive to Lynton and back again. On the way back to Exeter this morning, fine again.

Took the van to my friend's garage as they used to be a VW delearship back in the late 80s/early 90s and one of their mechanics did a large part of his training on T25s (handy!).
He says its a problem with the valves controlled by the mechanical choke getting stuck when its warm, possibly due to old vacuum piping. The piping in question was replaced - he also noticed that a restricter had been inserted into the vacuum piping which he couldn't understand, so has removed that. When I asked him why someone would have installed that he said 'because they didn't understand how it was meant to work'!
No problems since then (2 weeks ago) but not taken it on a big drive. As the problem last occurred after 2 hours of driving I guess we won't know until we take on another journey of that length.
If this doesn't sorted we'll have to take the engine out and look at the carb etc.
Having read all the way through this, can I make a suggestion?
Take two mins to insert the details of your van in your signature!
It will save you having to keep saying what it is, and it will save everyone either having to ask or not bothering to help because the info isn't there !

Driving to Glastonbury next weekend, our longest journey since we last had a 'stalling fit'. Will let you know how it goes!
Van has behaved perfectly around town the last few weeks, but it's only on longer journeys that they problem seems to occur. Will have to wait and see what fun and games next weekend brings...

There is supposed to be a restrictor in the choke pull down vacuum pipe, VW put it there.

Oh dear. So what effect is it's removal going to have?
Cold engine being when it's first started and the choke is in operation?
The issues we've had with stalling have been after an hour or so of driving, not when the van is first started. Would the removal of the restrictor affect this?
I need to get my head around this choke flap business.
Could the restrictor have been making the mixture two rich when the engine was warm and therefore causing stalling?

No the restictor is restricting the vacuum, not the induction air
When the choke is fully open the choke pull down unit is not used
After an hour of driving it would suggest gradual fuel starvation.
The restrictor in the pull down vac pipe should be put back where VW intended it to be
