If it is the main Carb itself,
It is likely that you could get a Carb off a later Mk2 or early Mk3 Vauxhall Cavalier, as most were fitted with Pierburg 2E3 carbs. Probably better with the early Mk3 1.8 Cavalier (upto 1992) as these should have a similarly sized jet set-up.
Just a thought, if anyone has no success anywhere else.

They have the wrong jets .... unsure about the golf/Jetta/Scirocco ones though.

Sure I read on here somewhere, that due to some aspect of the DG set-up, that jet size does not have to be spot on, just relatively close...
this is why I recommended from a similar sized engine ideally from the late 80's / early 90's

Stating the obvious here, but if you get another 2E3 carb off another vehicle, you can just swap all the jets from the one that you already have
(as jets don't wear out). Personally I would want the correct jets in there (!!!) as a weak mix will wreck an engine and a rich mix will wreck your wallet
btw, the golf/Jetta/Scirocco ones are 2E2 and are complicated beasts = I have had to get to know them well !
