I just used a grease gun, pushed the nozzle in between the boot and the shaft and squeezed some cv grease in, then forced the grease into the cv by compressing the boot into itself a couple of times.

ok,after investigation regarding packing out the CV boots, the only way I have found is to undo all the hex bolts on the CV joint, then separate the boot from the bearing. If you do both sides of the shaft you can twist them to check for excessive play. Pack and bolt up.

You can sometimes use a large plastic syringe too - just depends on how much flex is in the boot ends. Mind you, a noisy CV joint is generally a sign its up for replacement anyway. The grease may quieten it, but the wear/play will still be there.
I'm loathe to disturb CV bolts unless absolutely necessary as they 'relax' when undone and if you don't know the origin or quality of the bolts, retightening them can cause failure not long after. I still think the bolts were nowhere near man enough for the stresses on those joints in the first place. If you look at later AUDI ones, the bolts are substantially bigger. With the weight of a T25, on pull away you're asking a lot of those joints. I've lost count of how many 'incidents' I've had with T25 CV bolts. You really have to fit known good quality bolts and check them periodically. If you ever get a sound underneath like wooden blocks rattling about underneath, you can bet your life one of the CV joints is hanging on by three bolts.

I have the same problem (1990 T25 TD) . the knocking under load has occurred intermittently after a long run. In the end I fitted a new set of CV joints as that seemed like the likely culprit. After a few runs I got the same noise just once but then it went again, so then set off on a long European tour, about 5000km. The noise re-emerged about halfway round and I started fiddling with driveshafts. Gradually narrowed it down to the nearside shaft and found that shuffling the driveshaft shut it up for two or three hours driving.
My question to anyone out there who's got expertise on this is am I right in now guessing that the driveshaft splines are worn, possibly more at some points in the driveshaft's travel than others? That would explain why shuffling the position of the driveshaft temporarily shuts it up (or maybe it just redistributes the grease on the splines). If so will the knocking have worn the splines in the new CV joints too?
The problem got more persistent but the westy got us home so any thoughts before I embark on renewing driveshaft and possibly CV joints, again, are welcome.
Also if anyone knows of a T25 specialist near Macclesfield do let me know. I met a fellow T25 owner in the Macc B&Q car park who says there is one, but I can't find him!
