So it's nearly 5000 miles since my last service (oil/filter/airfilter/plugs/coolant, brake check)
I'll do the oil/filter/air filter again.
How often do the plugs need changing?
Anything else you would recommend?

I have 2 sets of plugs, 1 set clean and gapped (25 thou or .635mm) and in the van ready to go in and the set I'm running. You are 'supposed' to replace the plugs yearly but that's overkill in my experience and I swap them round every year just before the MOT. I change my oil at 4,000 intervals, by 5,000 you can hear by the tappets it's ready to change.
Once you're in the routine of servicing a once yearly good check round will re-affirm what you are feeling while driving the van. Obviously you'll feel or hear differences and notice use/loss of fluids.

change the coolant if it's over three years old
change the brake fluid if you can't remember when it was last done
renew the gearbox oil if the above applies
grease the CV's
clean the earth to the van at the battery, gearbox, engine

I change the gear oil every 2 years (about 36,000 miles). I've never had the good fortune to have the coolant in for 3 years
something .. water pump, or a hose, pipe, oil cooler or engine, has always gone
