If you are running a long belt you don't need the outside belt. No wonder the alternator belt was burning up!!

Yep you got it, If you can get away with running a single belt then do so, certainly makes adjustment easier, but do they make enough contact with the water pump to drive it properly, time will tell give it a go.
if you get probs then resort to 2 belt as we described for you, but if you do then come back here as there is an order to do it and shim use and bolt length etc

Update.
I fitted two belts as per suggestions and so far, touch wood, it runs just fine!
I've had false hope before, so will keep my fingers crossed. Off to Gloucester tonight to pick up a camper interior for the van! Staying over in Kendal, so hopefully everything goes okay.

766 miles later and van made it without missing a beat. 34.5mpg at about 61mph.
