I have got a 1987 T25 VW transporter and I have noticed that the engine overrevs when I change gear (particularly higher gears)
Can anyone help please?

It overrevs inbetween gears?
I'd suspect that your accelerator cable is semi-stuck.
Get someone to give you hand = alternate one stepping on the pedal, the other pulling back at the pump while you flush the cable sleeve with WD 40 from both ends.
You'd need to take out the spare wheel to get at the front end of the cable.
