Non-standard child seat installations

Having been blessed with a couple of great grandchildren I now find there is insufficient seating spaces for four adults and two smallish children in our Leisuredrive high top. I have the idea of fitting two sets of seatbelt fixings over the engine bay such that the child seats could be anchored behind the rear passenger seats. I have no worries about transferring the load path down to the chassis but just wonder about MOT, VOSA and Insurance. anyone any experience?
