Have you considered that you may have No middle in your thermostat, or that the one fitted may be jammed in the open position ?

Have you checked this before asking your question ?

This is from vagcat.com........ for a 1985 model

8......... 049919501
temperature sender / for coolant temperature gauge
0-125C M10X1 1 pin black / CS,DF,DG,DH, EY,GW

BASIC GERMAN PRICELIST
part number 049919501
Partnumber Title Price
049919501 TEMP.GEBER 20.45 Euro

and this for a 1986 model
(8) 251919501
temperature sender / for coolant temperature gauge / thermostat housing
2 pin black 20MM / DF,DG,DJ,MV, SP,SR
BASIC GERMAN PRICELIST
part number 251919501
Partnumber Title Price
251919501 TEMP.GEBER 20.45 Euro

There is a difference in the cooling system, the earlier model I believe had the thermostat mounted integral with the water pump housing, with a threaded sender.
Later models have the plastic thermostat housing and the temperature sender is held in with a clip.
Usual disclaimers apply

im guessing its a early water sys, by the way you said you shorted it out to earth. Its not unusual for those early senders to be the incorrect one, supplied wrongly.

its also a commont problem that the single spade connector gets tarnished with heated on grime from the hot / cold temps it suffers, try a new shiney one after cleaning the brass of the sender contact up with a nail file?????
