Jonny,
Not done a Viking interior but we have removed a Autosleeper a few times and then installed a new one.
I would say start with the bed and rear platform, then look in the cupboards to see how they are fixed.
Most likely start from the rear of the van with the wardrobe and then work forward.
The Autosleeper came out in one long unit which did make things a bit easier.
The new one was piece at time and all screwed together.
Look out for wires and pipes etc going through parts of the interior tha may need to be disconected and pulled through.

But most of all take your time and make sure you remember how it all goes.

Good Luck. :D
