Just building up a 2ltr Aircooled CU motor.
Could anyone tell me are the head gaskets the thick or thin ones in a gasket set?

Head seals are the thick ones but current thinking (which I find a bit worrying but go along with,) says leave them out.
If you change the rings, use 2 thin ones (old and new) on the bottom to help dodge the ridge.
Its an idea to gently lap the cylinders into the heads with grinding paste.
Careful though. If the cylinder doesn't reach the head sealing surface because its been machined, you'll need the thick rings.
If there are 2 sets of head rings in the kit, one is for 1800 and has a smaller inner diameter.
