Hey Gerry
You need M14x1.5mm nuts that have a 12mm radiused seat.
The standard VW nuts have a 14mm radiused which is too large for the merc rims.
Check out Simon Baxter's site, he stocks everything you should need:

Depending on what rims you have bought you may need spacers.
I picked up a set of merc rims on saturday and when I offered the front one up I discovered I will need some spacers to clear the suspension.

With an et of 41 the chances are you'll need a 10mm spacer which will reduce your offset to et31. This should be enough to clear your suspension with a 7" rim.
As far as tyres go, in order to keep you rolling radius exactly the same as the standard setup you will need some 195/70 R15's
I think this is a pretty standard size when it comes to van tyres.
