It's probably most important for insurance; you should always declare the correct usage of the vehicle or your policy might (probably will) be invalid. It probably doesn't matter hugely what's on the V5C, but it's unlikely that the DVLA will do anything other than send you a new document that says Motorhome instead of PLG. I think they only check the vehicle if you import a van as a motorhome (for safety of the fittings etc).
Your insurers might quibble if you had an accident and you hadn't told them it was a motorhome, or it didn't say it was on the V5C. They would definitely have a problem if you'd told them it was a van and you were actually using it as a camper.

Tell your insurance company EVERYTHING ! Don't give them 1 200th of a chance of pulling the plug on you if the brown stuff hits the fan.
Your V5 definition also dictates what it is you're driving as far as speed limits go. (i.e. 70 on dual carriageways for motorcaravans instead of 60 for commercial vehicles)
Reading the threads on Red Ken's latest potty scheme it will also affect you're access to London, should you wish to go there.
Ian.
