At the front is best... if oil pipes are of sufficient bore, shouldn't be a pressure problem - think 3/8" bore is recommended but most don't go that big.
Think we are at corss-purposes.. the sandwich is for oil cooler take-off - the original oil filter housing top has 2 M10x1 (or 1/8" NPT) tappings for instrumentation, on eused one normally plugged. I used one for pressure and the other for temperature

No need to fanny about with extra tappings into oil lines.
The AAZ has a spare tapping already in the filter head, as Clive said.
Replace the low pressure switch with a VDO oil pressure sender which has 2 tags, one for the light and one for the gauge.
Then, in the spare drilling in the filter head fit your oil temp sender.
When using a sandwich plate you are better to use a shorter, stouter filter rather than the standard one which rubs on the coolant hoses.
I use one from a 1.9D T4 "1X" engine. Mann, obviously.
Use only a thermostatic oil cooler set up.
