Lots of stuff in Wiki on removing screws and bolts. Did you read it first?
With self-tapperd the trick is to put everything into getting them out forst time, before you've totally mullered them.
Clean heads out
Drop of plus gas downthe sides if poss
Coorect screwdriver, good screwdriver
Tons of pressure BEFORE attemtping to unscrew
Can use an impact hammer effect (tap top of screwdriver while twisting driver with mole-grips, mate pressing down too
Proper impact driver (hammer-blow not battery rubbish

)
But the best way (just used it for self-tapper holding brake pipes right behind bl***y steering rack on a Micra) is to use this technique..

No screw/bolt punch? Then use a deliberately blunted edge of an old wood chisel, that's what was to hand outside other day and that got two difficult tuckers out on't Micra that. Bit of technique picking up the edge and whacking it just right, but you've 10 x better acces with those floor mat screws.. give it a go, cheap and works.
Mini-moles can often start pan-head self-tappers moving!
Drilling out - self tappers can be 'really' hard steel, a cobalt (Co8) drill should get the head off though, go for a size fractionally larger than you estinate the top of the thread shank - and wacth that tank on the follow through. All you really need to do is get the head off though, no more.
