Hi
Could be a couple of issues here and would really benefit from a error code from OBD scanner or Vagcom if you have it-does the conversion have the throttle potentiometer in the engine bay or at the accelerator pedal?
In the absence of a code I would check all wiring connections from potentiometer to Fuel pump as ECU reverts to a default setting normally around 1500rpm and no higher.
also check for any air in the diesel supply/return tubing as air ingress can cause performance/revving issues-These are (usually) caused by the Cheap Taiwan nasty thermo valve on the fuel filter being at fault or a small split in injector 'spill' tubing or possibly fuel pump main seal drawing air.
Hope this helps

Chris

Check the connections to the throttle pot, that's exactly what mine did with a duff connection.
