Last year my light started flashing at odd times. Checked - no problem with water.

Find problem with connections (hence my suggestions above) and make mental note to change them when I can get the bits (I was in France at the time) but continue driving to Spain, safe in the knowledge that the wiring is at fault.
Soon after entering Spain notice temperature gauge is steadilly climbing.
Eventually stop sourrounded by steam that was once water inside my engine.

moral - don't rely on the information from ONE gauge if you have two.
