Some would use ally chequerplate. Personally I prefer that brown textured plywood you see used as decking on flatbeds etc. I used a fairly thin grade (9mm iirc) to cover over the bed on my pickup. You could use say 12-15mm as a complete replacement I reckon, screwed or rivetted to the side and crossmembers. The stuff I used is 'ATP Beartex'. It comes in lengths long enough for the full bed, though I did have to have one join running lengthways. I stained and sealed the edges with varnish, and it looks quite good I think.

E D I T: It is designed for load-bearing applications and is waterproof so long as the edges are sealed.
