And head to a ferry port.

Well, it IS a fairly big place, "Europe". (And don't forget that the bit from your house to the ferry port is also Europe...)
Where do you WANT to go? Any particular countries you want to see?
What sort of area? Beaches? Mountains?
What sort of thing do you want to do?
Do you like hot-hot-hot, or do you turn into a crispy sweaty frazzle at the first sign of temps above 25deg?
Do you speak any other languages? Even a bit? Willing to learn?
How long do you want to be away for?
Will your van make it? <shrug> Don't expect _absolute_ reliability and freedom from problems - and regard any issues you have as part of the experience. Can you do any spannering yourself? Even being able to DIY basic stuff can get you out of trouble.

Weather apart, your biggest hassle is going to be season. Lots of places closed, and those that aren't will be on reduced hours/facilities, even quite a way down south.
We're currently unsure what we're going to be doing over the winter - but it ain't going to involve Northern Europe, that's for certain.

Expect it to be cold, fit a heater.

If you're travelling anywhere near the alps in winter you will need winter M+S tyres and snow chains. There are winter campsites (mostly for skiers) but there's generally a lot of snow too. This is nice in bright, crisp weather but those kind of days can be few and far between and most of them could be wet, grey and dreary.
If the little one is starting school in Sept 2012 I`d recommend moving the trip to April-August next year. The weather is better, you`ll have a decent choice of campsites. You´ll also be able to get decent prices using the camping card too.
Whatever you do, have fun

Just to reinforce that, it's not just a good idea but frequently a legal requirement.
