Maybe a stupid question, but if i've got an earlier bracket and leg (with brown handles) can i fit a later grey westy table?

You mean the one that mounts on the battery box corner?
I guess as long as the tube fits inside the mount... then yes.
Incidentaly I made one of these mounts, with tube leg and table.
inside the mount tube is a tang that stops the tube leg falling through.
The screws stop the table swinging around

Think the mount to seat base is the same, but the leg mount to table may not be. They changed from round tube on table base and sleeve on leg to threaded base on table to flat plate on top of arm in 87ish. All cream colour tables are round tube and a few of the early gray ones were too.. All later gray ones are new mount design.
