Engine Flooding/cutting out

Hi,
I have had my T25 for about 5 years and it has always had this issue although it has become more and more frequent.
When I first got it, it used to happen maybe 3 or 4 times a year and it is now at the point of happening every time I take it out.
You will be driving along when all of a sudden the the engine starts flooding you can smell petrol and you put your foot on the gas and nothing happens. The engine is spluttering and feels like it is either being starved of fuel or fed too much. If you do nothing it doesn't cut out entirely it splutters at around 1000 rpm and if you press the pedal it will cut out and flood. If you switch off the engine and leave the van and come back to it sometimes after 5 mins sometimes an hour or two and it is fine again. I have driven it down to Dorset for the week and nothing. I get back and drive it down the end of my road and it cuts out. Every time I have taken it to a mechanic it behaves and they cannot replicate the problem. I have had the AA look at it whilst it was happening and they said it is either electrical or fuel. They said to change all HT leads, plugs, coil and distributer. I have done this and it made no difference. He also thought maybe the engine was being starved of fuel but he took the fuel pipe off and fuel was coming out. It sounds like the choke is sticking but as it is fuel injected it has no carbs so I presume an ECU manages the fuel intake (problem with this possibly)? The problem seems totally random, I can drive for hours and nothing happens or I can drive for 5 mins and it happens. The strange thing about it is the way if you just leave it for a while it starts again without issue. Do any of you kind people out there have any advice or suggestions as I am at the end of my tether with this.
Other than this issue I would use the van all the time but cannot rely upon it whilst it is doing this especially as it is becoming more and more frequent. Please help!
