carb set up/problems....

This maybe a bit of a long shot.......
Haven't used the van for 3 monts due to illness so thought I would take it out today as Josh had a rugby tournament so I thought it would be ideal! How wrong was I?!
It ran fine then when I pulled off the motorway I noticed it was running at real high revs so struggled the last few miles but got there. Spent most of the tournament in the engine bay!! While I was 'playing' the accelerator cable then snapped, luckily near the pedal so had everything apart and managed to fix it (hopefully)
I could not get the revs down but narrowed it down to the left carb as when I removed all the linkages the revs dropped on the left one and the right was ok. Unfortunately I fiddled and turned practically everything to resolve the problem and although it was still running a a bit high it settled down on the way home but then was 'hunting' all the way home. Not sure if that's the way to describe it but but felt like I was constantly tapping the brakes and couldn't get the speed up.
Now I did turn the idle screw on the left carb which didn't make a difference to the revs initially but pretty sure this is what is causing my further problems. Alas, like a pillock, I turned it that many times, this way and that I have no idea where it was before.
I know I'm stupid but any sensible ideas please, both on the high revs and the hunting? 2.0L air cooled btw.....
