Coolant circulation Issues after conversion.

Hello,
I bought a t25 about three months ago which is pretty much in scrap condition. It has a clean body and most of the parts were there. The previous owner scrapped it cuz it broke a con rod and therefore broke the block too on the original 1.6D. When I bought it it was dumped on a road side for about 5 years.
After buying I got a Toyota 3c-TE engine installed which runs supererb. However I am having problems with the coolant circulation to the radiator.
I got the radiator cleaned before installing the engine and also got the metal coolant pipes running to the radiator from the engine bay made since the original ones were corroded. Now I did get to drive it for 120 kms without problems but when i drove it fast it overheated and threw all the water out of the expansion tank. On inspection the engine was hot but the radiator was COLD! I have already checked the water pump and thermostat valve and they are in excellent shape.
My mechanic who has good vw experience says that these cars have such issues since their cooling system gets air locked. But once the coolant circulates it will not give any more problems.
Can you guys help me with this since I have tried everything I could but to no use.
