I have looked in the WIKI but can't find anything.
If I wanted to install a water tank gauge to tell me how much water left in my tanks. Can this be done, if so how do I do it?

you need a resistance type
they are quite common in converted vans, like a scalextric throttle.
CAK tanks have some tank guages

I used one of these - if you're happy with a bit of diy/ingenuity
gauge £24

Or you can make one like the £24 gauge with just 2 or 3 leds and some multicore cable, one of the canal boat forums had plans for one a couple of years back. Think it cost less than a tenner.
Personally I use dedicated dipsticks to gauge tanks where I can, but I realise this not always possible.
