Dont want to remove the existing ones just add another set, and include the water temp one too. Thought I be best askin first so I dont bugger um up!

Piggy backing can be done but you have to be careful.
Wait until our resident expert comes along Angloeyes (or summat similar).
It's all about getting the correct resistance level in your new LEDs, too low and they'll burn brightly for a short time, too high and they'll not light at all.

You can fit LED's into the expansion slots under the existing LED display but you will need to drill a 5mm hole for each LED. Unfortunately, LED's don't like to be 'pggy backed' as one of the leds will hog the current and the other stops working or is very dim, you could try this but but the problem is making a connection to the existing LED's. I have a small steering wheel and the leds are in the lower expansion slots. You have two options:-
1. Place a small cosmetic mirror under the existing LED panel and angle it so that you can see the LED display reflected in it.
2. Attach fly leads to a new set of LED's and push the ends of the wire into the LED sockets behind the membrane panel and refit the LED's into the new location. The only one that will need a resitor inserted into the flylead will be the Main Beam. You need a standard Blue diffused LED in the range of 60 to 100mcd and a 10K series resitor. If you want more details then let me know.

forgot, you can't do anything about the coolant led as it is in the gauge and works from the gauge internal circuit. I wouldn't swap my 'bling' wheel for a standard one but it is a problem if it obscures the warning display. You can place LED's in series and probably won't notice much difference in brightness but you still have the problem of doing it. Can be done but depends on how much hassle you want to go through.

if it were me ( and it isnt coz i can still see mine even with my golf mk1 steering wheel) i would add a extra set of leds and just disconnect the originals and connect the replacements in their place electrically.....
tbh, its only oil and alternator you need, if you cant tell if you are on main beam, you need headlights not leds! lol!
