engine still overheating

engine still overheating after a top end rebuild and one new cylinderhead!
I was told that it could be due to the fact the timing is too far advanced. So I took it to a local garage and told them this, so they retarded it a little but its still overheating after about 20 miles. But the garage might have not known what they where doing with an 2ltr Aircooled engine.
I did notice that the idle speed had picked up quite a lot since the rebuild and remember asking that they do not touch the carbs as I had recently had them done by Gasure. This makes me think that the timing could be to advanced.
I do have some pieces of timware missing but these are the underside ones 12,13, 15, 16 on the wiki picki, but it wasnt overheating before the rebuild without these bits.
Oh and I know its overheating as becuase the oil light comes on after 20 miles. This I am sure is caused by a reduction in oil pressure due to the oil getting to thin becuase of engine heat. The brakes also go very spongy becuase the heat of the engine is boiling the brake fuild (rear wheels un-touchable due to the heat).
Last bit of info, the oil pressure light only comes on at idle. When I rev it goes off.
I now belive that it could be a partially blocked oil cooler or oil channel somwhere or possible a faulty oil pump.
Any ideas on this problem, I think I might drop the engine and remove the oil cooler and clean it - is this a huge job?
